We strongly recommend using this olive oil strictly as a finishing oil. Heat can damage the complex aromas and flavours in the oil. Enjoy at room temperature or slightly heated to experience the unique flavours of our ancient olive trees.

The flavour shows abundant fruitiness, green grass, sweetness, some bitterness, slight sharpness and notes of hay, with exceptional harmony, high complexity and persistence.

All our olive oil is a blend of three different types of olives: the Kolovi, the Adramatiani and the Lathoelia. Kolovi and Adramatiani olives ripen slowly and are black in colour. They thrive in soil with slate in it. Their flavour has a complex, fruity taste and their olive oil colour is golden yellow to golden green. The Lathoelia thrives at lower altitudes and is larger in size. Their colour ranges from red-violet black to purple and deep black, and they are not harvested until they are fully matured. Their flavour is fleshy and slightly fruity and fragrant.

The harvesting period for this award-winning organic olive oil runs from mid-to-late November to early January. This is when the olives are just changing from their ripe green colour to their mature black colour. This is what gives this olive oil its delicate flavour.

The olive oil's acidity is also of exceptional quality. evoᶾ free acidity ranges from 0.3-0.35% which allows it to be labelled as extra virgin and categorised as exceptional quality. It comes in a 500ml anti-reflective glass bottle.

Finally, this is an organic extra virgin olive oil. This means that the farming methods used are sustainable, no chemical fertilisers are used and no chemical pesticides are used to kill the olive fruit fly. Only organic fertilisers and natural methods are used to kill the olive fruit fly. This translates into a clean, healthy product that you can consume.
